you didnt mention a timeframe, but I see a Griffith's 1850 entry for a Michael Deady in the townland of Jerpointabbey as leasing house offices and Land. There seem to be two mills listed in the townland at the time

a flour-mill occupied by a Bridget Phelan and owned by William Shea

and a corn-mill occupied by a Patrick Delany and owned by James Doyle

.. see Deady, Jerpoint, Kilkenny

See this OSI map for the location of the Corn Mill - Corn Mill, Jerpoint  (select the Historic or Historic BW option).

Jerpoint house and the old church ruins are to the north of this mill, and the abbey to the east, and the mill race runs to(from?) the north east... so the other mill is probably either along this channel or on the nearby River Nore.

The map is dated around the 1830s.

Slater's directory of 1894 lists William Deady, miller in the townland of Jerpointchurch (described as 1 mile south-west from Thomastown station.)

If William died in the area then there's a possible record of his death from the BMD Index of familysearch :

 Name: William Deady
 Registration district: Thomastown
 Record type: Death
quarter and year: Apr - Jun 1914
Age: 66  (est birth year: 1848)
 Volume: 4 / Page: 472

A death cert would show his occupation which may help your search..

This seems to match up with a 1911 census records for a Deady family in Jerpointabbey townland, although this William's occupation is farmer.. see Deady, Jerpoint Abbey

The only person I see with a miller occupation in the townland at that time is a Patrick Kelly If you look at the building return for the townland (Form B1 page 2) you can see that there's a corn-mill (presumably worked by Mr.Kelly) which is listed as being owned by William Deady, along with his own house and another property.

Here's a link to the OSI map showing the Flour Mill, Jerpoint opp. the Abbey. (select the Historic BW option)

My Great grandmother was also born at the house in 1875 as marion Deady but she was also known as mary anne. This would of been one of Williams Daughters she was disowned by her family for marrying beneath her.I think she married John Walsh the lived in cloughabrody Thomastown and as far as i know became the local district nurse would love to find out more about this person.

There is a very large Deady headstone in Jerpoint Abbey in the style of a Celtic cross.
Worth a visit

I have read the inscription on Celtic cross of Limestone which stands about 11 feet high. Prominent position in Jerpoint Abbey. Latin inscription.  Front panel is decorated with Celtic Designs

Sub hoc monumento    Jacent Cineres    Michaelis Deady Jerpoint   Qui obit die Quinto Julii
Anno Domini MDCCCLXXXIV et aetatis suae octo gesimo duo
Requiescat in Pace

On side panel
Hic quoque  Sepultus est Michael qui obit MDCCCLXXXV   Nepos Michaelis Filioulus
Cullielmi et Catherine Deady  (Alias Quinlan)

Rear panel
Hic quoque  Sepultus est Jacobus Filius Michaelis Deady qui obit die 17 Jul11  MDOCCCXXXVI et Aetatis Suae undeoct age simo    Requiescat in Pace

I never studied Latin so I may have made errors in transcription.
