I have had a look at my CD for Ely St Mary 1841 census, and there are loads of Topping's on there. They were mostly Shoemakers and one was a Tailor. There are only 3 Haynes on there all female-2 Elizabeth's aged 70 years and 25 years and Keziah aged 25 years. They rounded the ages to the nearest 5 years in 1841. There were quite a few Haynes in other areas of Cambridge, but no Samuel that fitted the date.
The only other thing I can suggest is you go on the Cambridge Family History site, and purchase the CD for Ely St Mary. It ranges from 1559 to 1950, and is rather costly at £20. The CD number is CD/PR/096. Alternatively you could ask them to do a search of the timespan you want for any Haynes they might be able to find. They will tell you the cost before you order anything of course.
