I think I'm coming down on the side of Turff and Worthing.  Turf being in the kitchen to replenish the fire and worthing being associated with the fermentation of beer.  Wort being the modern term for fermenting beer.  Didn't everyone drink "small beer" back then?

Kaz, according to the National Archives currency converter, your x g grandfather's dung would be worth £103.81 in today's money. A good investment or just 'rich'!!!

I've changed my mind!  After deciphering yet another inventory which also has Turfe & Worthing on it but this time not in the kitchen but with loose boards, shelves, hens and geese, I've come to the conclusion that BridgetM is right and worthing is most likely to be manure.
