I don't see her immediately on the 1881* census

It says that Janet is his wife - have you checked the births/marriages on Scotlands People?

Maybe  Margaret died and he married a Janet. There's a big gap in the children's ages and he's only 15 years older than Margaret

Where did you get the info that George was Margaret's father?
