Winefred Hawkins 1831 Ireland to Lancashire

I'm trying to find the woman who with Martin Mulvey gave birth to my grt-grandfather, also Martin Mulvey, born in abt 1860, apparently in Miles Platting, Manchester, but almost certainly near or in the Salford region where he later lived.

In 1851 there's a Martin Mulvey aged 18, born Salford, renting in Salford. He's a dyer.
In 1861 there's a Martin Mulvey aged 30 from Ireland working as a farm labourer, renting with a  Warrington family of farm labourers. Also staying there is Winefred Hawkins, a farm labourer. Could they have been a couple?

With nothing else to go on - no birth cert, no censuses of 1860 Martin's early life, no other Martin Mulveys known to be in the area - this is my hottest lead so far (which shows how bad it's got!) I wonder if Martin and Winefred left the farm to further their romance, moved to Manchester and pretty quickly had Martin. Or even left Ireland as a couple.

3 points which may be of relevance:
1. My Grandma, Martin's daughter, was said to have Irish roots. If so, they're through him and / or his partner.
2. 1860 Martin had no trade. He was a porter in a stationery shop and later worked on the tramways.
3. There are no clues on the 1880 wedding cert. The witnesses are the bride's sister and brother-in-law. Martin said his father was a packer - so a general labourer just like the men above.

Does anyone know anything about Winefred Hawkins or even Martin Mulvey jnr or senior to put me straight on this?

Martin jnr was born around 1860 - so where is he in 1861?  He is not with Martin or Winifred

Theye were both living and working in Warrington but Martin jnr was b Miles Platting - not impossible I know

Aah but....

He stated 1859 when he got married to Olivia (same age) in 1880 BUT in every census they stated 1861 as his birth age. Dec 1861? Maybe even 1862? Not so far out when you look at 1859 and 1861. Maybe he was trying to appear older so as to win Olivia's dad's approval for the wedding.

There is no Mulvey/Hawkins marriage in England.  In fact - there is only one Martin Mulvey marriage pre-1861 and that was in Sheffield 

The first Martin Mulvey marriage after 1861 was in 1896

Yes I know! That's my problem.  >:(
I can follow the life of Sheffield Martin and his wife etc but not the two Martins in Manchester - and who WAS the Martin that kept getting incarcerated for small crimes and finally got sent to a rehabilitative semi prison which was only fit for young men? Both my Martin Mulveys - whoever they are - would have been too old.

It's a mystery.
