I have come to a dead end on my search so thought i would give this a go 

My Nan - Alice Waudby Barlow Born 1920 at 1 Blenhiem Cottages, Monkgate, York.

Mother Pollie Barlow - Formerly Rhodes .... as expected no fathers name on the birth certificate

I have found a Pollie Rhodes born 1981 Castleford who married a Ernest Barlow in 1911 North Bierley, but im not sure how to tie it all up as i cant find any information relating to 1 Blenhiem Cottages anywhere?

Blenheim Cottages were between No 25 and No 29 on the north side of Monkgate in York, 1881 Census.

The Tap & Spile pub is at 29 Monkgate, which you can see at http://www.rootschat.com/links/0cds/ Blenheim Cottages would have been to the left of the pub.

Hello There.....

It is interesting to note, that your grandmother's middle name is Waudby.

Living at 1 Blenheim Cottages, Monkgate, 10 years prior to her birth, were a family called Waudby
Could one of the son's be her father ?
