Probate requires proof of Death as well as a valid will.

Accepted from memory are

1.   I have seen the dead body

2.   I have been to the Funeral

3.   Death Certificate produced

As we all know Death Certs cost money and take time to obtain, so most solicitors drawing up an affidavit of death will go for one of the first 2.
Death Certificate might be used if there was a delay in applying for probate and the Executor (when the will was found) had not attended the funeral.
