Employee of a Parish and ? about KNOWN Address

Would there be a way of finding a person employed by the Parish Clerk as a Laborer in 1861 for Middle Claydon?

Also, another board member mention to check for KNOWN address which is  apparently different from address which may be stated on Census.  What is "Known" address and how is it accessed.
