I wonder would Stephen Thomas still be trading as a soap and candle maker in 1841 & 1851 if he was declared bankrupt in 1834 ?  He may have changed his occupation - just a thought.  Do you know where Stephen comes from? his possible date of birth? or age ? Do you have anything further that you could share with us so that we may be able to help locate him for you.  There are 3 candidates in the Gloucestershire area that I can find in 1851 - one is a salesman, (35)  the other a beer retailer (40) and the third a gardener (27).

If you have access to " Matthew's Directory of Bristol, 1851"

Could you please look up  and see if there is a ""William Thomas"  confectioner/grocer he would be located  at
White Ladies Turnpike.

He is the son of Stephen Thomas

I have received information that Stephen Thomas died in 1855
in Pembrokeshire he was a farmer he has mentioned his grandchildren in his will that lived in Bristol

Don't know if your interested, may be same family. I think they were Welsh originally. There was a Christopher Thomas's Soap and Candle makers in Broad Plain Bristol where my Grn worked. Closed in 1950s.

                     Thank you for the reply at one stage I thought William Thomas was a Soap and Candle Maker
but he turned out to be a Grocer who died young and his wife remarried.

His father was Stephen Thomas who was a Pembroke Farmer  and died not long after his son.
