There's a tree on Ancestry that shows 5 children:
John (1851)
Fanny (1858)
William (1869)
Henry George (1878)
Eliza Jane (1885)

but no sources are quoted except censuses.

I have this family in my tree, as Fanny was Frances Legate, baptised 29 Feb 1832 at Henlow, with which name I'm connected in Henlow. I question the Ancestry tree's inclusion of the last child, Eliza Jane. Fanny appears to be too old at 53 to be the mother, and in 1891 there's no sign of Eliza. Freebmd has a death of Eliza Jane Pateman aged 0 in Biggleswade registration district in 1885, but I can't see a birth registration. Strangely the IGI shows a baptism though, on 29 Nov 1885 ie after she died! - but at Langford. I think more research is needed on her.

I've done no work on this particular Pateman family though.

* Just spotted an error in it. William and Frances (Fanny) actually married on 23 Feb 1851 not 23 Apr as the report shows.

There are some large gaps between the births.
7 years, 11 years, 9 years.

Does this indicate possible other children who didn't survive to the next census?

Or was William away from home?
Army? Prison?

The IGI has only baptisms for the four children already found in censuses. I can't see him in the Bedford Gaol register at http://apps.bedfordshire.gov.uk/grd/ . Plenty of other Patemans though!
