 Sarah Weston b: Abt 1857
 Elizabeth Mary Weston b: Abt 1859 in Yalding, Maidstone, Kent, England
 James Thomas Weston b: 1861 in Yalding, Maidstone, Kent, England

Looking at transcripts for Yalding baptisms has turned up very little. There are parents Thomas & Charlotte WESTON baptising children in the 1830's, a Thomas & Sarah - 3 children in 1845, a Thomas & Mary - 1 child in 1825 and a Thomas & Sarah - 1 child in 1810. But none with the parents you give, the only one that comes close is;
Oct 03 1852 Mary Ann Dau of James & Jane WESTERN of Yalding (Father - Labourer).

No baptism for a James WESTON around 1824, but there is the baptism for Sarah LAMBERT;
Mar 07 1819 Sarah Dau of William & Elizabeth LAMBERT of Yalding (Father - Labourer)
She has 8 siblings, let me know if you are interested in their details.
