Joan is a farm worker in 1841 & a house servant in 1851. Not every woman marries. You can use the opc site to lookj for marriages of the other siblings.

The 1841 census gives very little detail. Sarah & her son might just have been in Breage for the night. We can't tell at this distance. The census is just a snapshot of one night. Her address at time of death is very similar to the one given for John & Thomas in 1841. There is no evidence at the moment that Sarah was staying with/visiting her mother in 1841, could have been a relative but may not. Don't let your imagination run riot!

John junior can be followed through the census years, he ends up in Surrey. I haven't seen John & second wife & child after the 1851. It's possible that they emigrated
