Thank you for going to that trouble.  David and his sons were all quarrymen, probably at Dinorwig, except Joseph is in the 1861 census as a 'student of the Independent Ministry'.  So I think, like you, that David died in a quarry accident. Ellis David Jones continued to mine slate in Australia and made a fortune from it eventually owning several properties in central Sydney. John David Jones lived at Mount Pleasant Gallt y Foyle until his death in 1910; I don't know what happened to the others. I visited Deiniolen and the Dinorwig slate quarry in 2006, a great experience.
Thank you for your interest, I think I have all exhausted all there is to find about this family in Caernarvonshire.

All the best - If I do ever come across something which might give you a lead, I'll let you know. No David Jones is recorded as having died at Dinorwig 1841-1851, incidentally.
