Suggest you tell what you already know about William and how you know there is a brother if you are asking for help to track them further.

Hello achooo do you have any idea where  in Somerset the family were from?
I see you mention William Moss as the father and as having two sons, do you have any idea of who the mother may have been?
Anything further that you can give to us in the way of details that you have, the easier it may be to find your William Moss.  There are quite a number of William Moss's who are resident in Somerset and who were born c. 1841.  A place or even a possible area of birth will help, I'm sure, to narrow down the search.

Oops! I meant to write Ellen as his wife, on that 1881 census! :-[

Probably screwed up because my grandmother Ethel lived in Portishead!? ::)

Can I ask - if you have any further information regarding William and family, please let us know now.
This drip-feeding of information is very frustrating, and time-consuming! ;D
