British Subject in Hong Kong Birth

Could someone help find a possible birth record for a Mary K(C)atherine BETTS please ?

She was born c 1852 in Hong Kong, according to the census.

Father possibly a Mariner, possibly a Sea Captain.

She's a bit of a mystery, isn't she?

It looks as though she was not baptised in HK, since according to a tree on Ancestry she was baptised on 13 October 1861 at St Mary, Woolwich as Mary Katherine Patridge, d/o Dan Patridge, general merchant and an unnamed woman.

That seems plausible. On the 1871 census there is a Kate Betts in Erith, born China, ward of Daniel David Patridge, and Alfred Castle (her future husband, I think) is there as groom.

Ah!.. there is a consular marriage in Ningpo, China 1855-1859. Dan Patridge and Mary Elizabeth Betts are on the same page of the register.

I had the married couple on the census

I found a marriage, for Alfred CASTLE and Mary Katherine BETTS in 1871 and was hoping, I had the correct couple.

I have found the census record in 1871 on FindMyPast.

Kate BETTS (1851) and they have a daughter Martha PARTRIDGE (1847 ), is recorded as a 'WARD' of David and Elizabeth.

Does this suggest, that David had a brother Daniel, who married a Mary Elizabeth BETTS mother of Kate ( Mary Katherine ) maybe ?

Are you using Ancestry?  If you are, you will find a family tree which shows quite a lot of detail about this family (search for Dan Patridge).  The owner suggests that Mary Katherine was the daughter of Dan and a Chinese woman.  This doesn't explain why she used the name Betts, of course, but perhaps if you contact the tree owner they might be willing to tell you more.
