The marriage doesn't say if George is living or not but as he has a different surname from James and Annie I guess the question is did George die and Annie remarry with James using her new husbands name or was Annie unmarried when James was born? In which case is Reynolds her maiden name and widow is a fib or was Rountree her name and George is a fiction or was it something else entirely?
Need to look for a birth for James and a marriage for Annie.

James Reynolds was my granny's father.  He was illegitimate and there is no father's name on his birth certificate. 

On his marriage certificate his father is listed as George Rountree, Labourer, and is from the same area as my granny's family - Derryloughran, Loughgall.

James was born in 1876 and was married in 1903.  There doesn't seem to be any George Rountree prior to the 1880's listed online. 

I'm not sure if he is his father? Annie Reynolds, James' mother, never married.

So it looks like George is his father and James was always aware of this but trying to find what became of George or even where he was from might be impossible.
James' baptism might be some help.

Thank you - they were two different religions (Annie Reynolds and James - Catholic / George Rountree - Protestant) and that was quite a big thing in Loughgall, Northern Ireland, at that time.

This is the first I have seen that he had a father.  My granny always said her father was illegitimate so she maybe didn't know?

I guess you just have to assume James knew his father's name, usually when someone makes up a father they don't give a different surname so you'd be more inclined in this case to think he was saying what he believed was true.

What Religion and Birth county does George Rountree give on Census?

There is a George Rountree in the same general area as Derryloughan of a similar age to Annie
Could be a possible
