-baptism on family search gives mother as Hannah- so looks like he is with mother in 1841

This must be his own baptism on familysearch:

Joseph Humphrey bp.15/5/1831 Stisted, son of John and Hannah.

Children to other parents have 'Humphreys alias Carter' as surname so presumably same scenario for John.
