Are you able to give us a link to the Irish 1911 online census for the O' Toole couple so that we can see all the details? I am struggling to find them.

Gloucs: Timbrell (Winchcomb)
Hants: Stares (Wickham)

Is this Catherine & second husband in 1911 census? (you said "looking at 1911 census her age is 35 so she was born 1880/1881 if this is correct" but 35 years before 1911 is c1876 NOT c1880)

Looks promising.

So if that's her she was born in County Dublin but not the City of Dublin (which was the birthplace of everyone else in the family)

This is confusing.

In your post on a previous thread reproduced at reply #3 on this thread, you said that Catherine was 30 in 1911. You later said (reply #7 on this thread) that she was 35 in 1911.

Is this the 1911 census you're referring to (found by aghadowey)?

www.census.nationalarchives.ie/pages/1911/Dublin/Mansion_House/Vance_s_Buildings/75091/

If so she is 30 rather than 35 in spring 1911, so born 1880-1881. It looks likely to be the right census as it matches the address you've given from the 2nd marriage record. If it is right it gives Catherine's birthplace as County Dublin.

I think you need to sit down and look at all the information and check the dates to get the facts straight.

The 1902 marriage to William O'Toole gives Catherine Quinn's address as 3 Vances Buidlings Dublin and we've found William O'Toole and wife Catherine married 9 years at the same address.
http://www.census.nationalarchives.ie/reels/nai000193699/
Therefore, it seems pretty clear that this is the right Catherine and her details show her as age 30 NOT 35 and born Co, Dublin NOT Dublin City. This is not to say those details are correct but they are what is on the census form.
