Thanks for replies, interesting.  I searched for 'suet factory' and it came up with this link about Llanelly, not that far from Swansea having a food company start a Suet Factory there, so there is/were suet factories!

Yes, the more I read the more I am now convinced the occupation was Suet Factor, selling suet from a factory to bakers etc, he was living in the High Street after all, a little way from Swansea Market (which is still there). One of the best indoor markets in the UK I reckon!!  haha I live in England now.

I'm late to this but thought I'd put my two cents in anyway.  :)

It doesn't look like Suet to me. The enumerator makes the 'S' quite distinctly.

I think it looks like the word begins with an 'F' that is uncrossed or an 'L'.

It is Feather Dyer, the same F in Fitter. The word in question, either the F wasn't crossed, or the t wasn't crossed, although I don't think it is S at the beginning. It could be something entirely different but I would go with Fuel.
 Fuel could be several things, for example it may have been lamp oil.

What is the 1881 census reference? Can't seem to find the complete image  :P
