I think Grimsbury fell under Northamptonshire at that time.  The 1881 census for Grimsbury at FamilySearch.org is listed under Northanptonshire, Warkworth.

The border between Oxon/Northants is now slightly further east, across the M40.

I should know better having made an index of the villages of Northamptonshire
for 1841/51 Censuses for our Library  :-[ and there it is listed.
