Doesn't help with time in workhouse, but at least the above family were together again!
In 1881 RG11; Piece: 523; Folio: 75; Page: 1
100 Upper Grange Rd Southwark
Isaac Clark   56 b 'Barling' engine smith [E & M]
Sarah A. Clark   52 b Sheerness
Henry J. Clark   21
Samuel A. Clark   19
Charles T. Clark   17
Arthur W. Clark   13 all born Bermondsey
Anna Clark   65 visitor b 'Barling'

Haven't yet found a marriage on freebmd.

Josey

ADDED:
If Margaret in 1861 might be Sarah's sister, then
1851 HO107; Piece: 1581; Folio: 38; Page: 20 MAY be relevant, giving Sarah's mother
3 Hyndman Grove Camberwell
Margaret A Hughes 53 b Greenwich widow of boatswain
Margaret H Hughes 28 b Sheerness dressmaker

However, if OP's Henry was born Bagshot, perhaps this isn't the family?
