Hi can someone help me by looking up these people:

John Parker (father of Henry)
Henry Parker (born 1832 in Nottingham)

I am expecting them to appear in the Sheerness area of Kent around 1851/61 in the same household.

It doesn't appear that they are in Sheerness/Minster 1851 according to Colin PENNEY's surname index:
