She may have been Elizabeth MOSS... no real proof of any of this being right yet.  I am a bit worried about the age discrepancy for Elizabeth SIM in 1861 so I am going to do some more digging and see if I am in fact on the right track or not.

I am almost certain that the Elizabeth SIM boarding with the GREGSON family was not Mary Ann's mother. For starters her age is wrong and I would have thought she would have been listed as a family member ie Mother in Law of Head of Household rather than just Boarder.  Chances are she was related to Mary Ann but doubt it was her mother.

Also, in 1871, the SIM household I have been following in this thread is intact in Longton.. still with both parents and children Jane, Ann, Margaret, John and Alice.  Another reason to discount that other Elizabeth as Mary Ann's mother.
