Eva Jane did not marry Walter Mullet and the children are not hers, in fact the children are not even Mullets, it's another wrong transcription, their true surname is Mollet.
Charles and Eva are the children of Philip Charles Mollet and Harriet Ann Spratt.

To work out the connection you have to go back a couple of generations to James Spratt (1798 Hampshire) and Harriet Henblest (1811 Hampshire). Among their many children were James (1834) and George (1837).

James married Susanna Kendall in Southampton in 1853, and must have  moved to Jersey between 1861 and 1862. George may have moved here first as he married Jane Mintern in Jersey in 1859.
Harriet Ann Spratt was the 8th child of James and Susan.

Harriet married Philip Charles Mollet in St Saviour's Church on November 19th, 1893.

Philip Charles Mollet, aged 26, bachelor, occupation Shoemaker, living and born in St Helier. Father Philip Charles Mollet - tailor
Harriet Ann Spratt, aged 24, spinster, no occupation, living and born in St Helier. Father James Spratt - Sawyer.

Philip and Harriet had 4 children to add to the illegitimate son that Harriet had already, Sydney Alfred born 29/9/1889.

Charles Philip born 7/7/1894
Stanley Harold, born 4/8/1895, died 25//8/1899 of Scarlet Fever
Gladys Annie born 1/9/1898, died 19/12/1898 of Convulsions
Eva May born 13/7/1900

Harriet herself dies on September 15th, 1900, her cause of death is given as Lupus.

In 1901 poor Philip is living alone in Peter Street, described as a widower and his children are living with Harriet's Uncle George and his wife Jane Mintern, so I suppose technically they are great nephews and niece.

Just to add another layer of complication Jane Mintern is the daughter of Elizabeth Spratt, sister of James (1798). Elizabeth came to Jersey with some of her children including her sons by her first marriage, surname Gurd.

The Harriet Smith that Eva Mollet is living with in 1911 is a sister of James and George.

Hope that's not all too confusing
