Looking at this again I think John was having a bad day when he filled out the census form in 1911

Probably not as they are having children baptised in Ettingshall 1871-1872 William and Edward.

Enoch died 1873 which would fit Clara was baptised 14.4.1873 St Andrews Netherton (Also an Annie baptised the same date)

Enoch buried 29.10.1873 St John Wednesbury (as he was a coal miner he might have died in an accident and been buried in the nearby church)

Maybe Edward and Jane never made it to the church on time?

If you look at the actual writing on the 1911 census it could be Foster not Fisher

I havent the foggiest where the Elijah bit comes from John and Elizabeths child Elijah aged 1 isnt registered on the BMD so it could be he is actually called Edward too
