As guestimate on Thomas and Sarah's birth years would be around 1785 ish, so could they have died before 1871?

I have found a marriage for a Thomas Highfield and Sarah Simpson at Church Eaton botp, 16 Feb 1807 on FindMyPast. Edward Simpson and George Stevenson were witnesses.

Dorset / Hants: Derham, Stride, Purkiss, Sibley
Yorkshire: Pottage, Carr, Blackburn, Depledge

The 1807 marriage entry is the correct Thomas, Father of Edward (born Brewood)

I think this Thomas is too young. Even allowing for rounding in 1841, the earliest this Thomas would be born is 1797. First son Thomas is born in 1811.

This looks like a widowed Teresa and her unmarried son.
The same Teresa is on the 1851 with daughter and grandchildren with surname LLoydd. The daughter's name looks like Luey. May be shorte for Louisa / Louise?

But as there in same location, possibly related to your Thomas

just checked image of 1841 properly. Lucy Lloyd and some younger children are listed below Thomas Highfield, so if Lucy is Teresa's daughter, it doesn't look as if Lloyd is her married name.

So perhaps Teresa (maiden name unknown) married a Mr Lloyd and had several children and then he died. She later married a widowed Mr Highfield who already had a son Thomas, somewhat older than Theresa's children. So Thomas on 1841 might be her stepson. But still too young to have fathered Edward.

So that gives Thomas's (son / step son of Teresa) year of birth as 1797.

Thomas (father of Edward) was a labourer, abode Gayley on Edward's baptism record. No information on occupation or abode on their son Thomas's record (book is in different format)

Haven't found the 1825 baptism (Elizabeth)

Yes that fits Gailey is well known (Island A5 intesection with A449 road nr Penkridge Staffs
 where did you find the baptism record ?
