Civil Registration of births in Ireland began 1864.
Do you know which denomination for Gilroys.
You may have to wait for Roman Catholic Church records available online in July.

Is it possible that James was married twice?
Otherwise Honor would be aged 13 in 1855 when Edward was born
and James would have been 15 if born in 1840

Very good point - I have never noticed this!  Edward may have been from a previous marriage!  I will look at the info again on the marriage details

I've had a quick look at the census returns and can see them in 1871, 1881, 1891 and 1901
On the first three they are born Ireland but in 1901 it changes to Liverpool
Also their ages vary greatly in 1901 James states that he is 70 (implies b. c1831)
Nora states that she was aged 60 (implies b c1841)

There is also a family on the 1851 UK census in Liverpool Head Nicholas, wife Ann (usually the name changed to Nancy) with their children all born Ireland
