Regarding that 1881 census, it is clear that "milkseller" and "mess" have been added later in a different hand.  These are  recording the categorisation of the occupations to fit the official occupational classification scheme.

The rules said that cowkeepers in towns should be classified as "milkseller":

"MILKSELLER, DAIRYMAN. Includes “Cowkeeper (in towns), Purveyor of Asses’
and Goats Milk. Milk Hawker, Carrier, Contractor.”"

Thanks for taking time to explain the oddities of the census, I have also downloaded the PDF  regarding the 1881 census that you mentioned.

At least I am learning from the basic mistakes that a beginner like me makes!
