I'm a card carrying member of the grammar police, and I agree that un-redacted is the correct term.

Correct me if I'm wrong but I believe the OED has it without the hyphen, therefore unredacted   :D

If I have one document un-redacted , do I have a document that was redacted and now no  longer is ? Or do I have a document that never was ?

Grammar police have fun with tense :D

Ho Ho Ho and away with one blow.   It seems you have one document that now is, and yet now was but now is longer than it was before;  for it is now as long as it was when it was first acted, for it is now no longer red, but it remains read and has now become readable yet again.

I seem to be the only one picked up for a hyphen, but I did use it deliberately in this case.
