There are plenty of Bastard christenings in Familysearch 1560-1600, including a Pascha Bastard, father Trethew Bastard, in Cornwall, as was Bastian Bastard.

You are missing the point, Stan.  Every other entry has "son of" or "daughter of" with the father's first name and surname.  For Bastian, it is clear that bastard is a description, not a surname.

It could have been an Adult baptism. All the parish registers I've seen usually have "bastard son of" followed by the name of the mother.

Bastian Bastard was baptized as the above date 15.4.1562 in Gerrans Cornwall

No mother or father given , giving Stans point substance but to contradict it does say ''son'' so who knows

Surname
I wouldn't think so, by comparison with all the others who have a named parent?  If Bastian had one, why wasn't 'he' treated likewise?

To answer that you would have to compare not only baptisms of bastard children's baptisms but also adult baptisms entered by that particular vicar/cleric.
In my experience adult baptisms seldom name the parents which points to Stan's suggestion that Bastard was his surname.

OK, accepting that possibility, there is still the point that this document gives all proper names their proper capital letters - Bastian is a lower-case bastard ... :-)
