The transcription cd of Bristol & Avon FHS shows a marriage at St Mary Redcliffe on 25 July 1819 between John Fox and Jane Hobbs - no further details I'm afraid, but this is the parish they lived in in 1841. I can't see a suitable baptism for a Jane Hobbs, apart from one in St George, Glos on 14 April 1797, dau of Richard and Betty. It's difficult to see from 1841 if Jane was born in county, but as John said yes, when he was born in Wales, it probably doesn't matter

Portbury Hundred site has the following baptism:

June 24 1799 Jane d of Joseph and .......  Hobs

From an earlier baptism it looks like it should read Joseph and Jane Hobbs. I believe Pill was in the parish of Easton in Gordano, which is where this baptism occurs

Wow it certainly looks like a great lead! Do you know if records exist for stonemasons listed in Bristol? I can't find anything from directories at that time?

When you receive the certificate for Sarah's birth, it will give you Jane's maiden name - that should show if this is the correct marriage/baptism. If so, you can follow up the Hobbs family in Easton further. Regarding masons in Bristol, I don't know of anything specific (I have a slightly older ancestor who was a mason in Bristol but haven't found much on him) but it might be worth contacting the Bristol Record Office, who I've always found very helpful ( https://www.bristolmuseums.org.uk/bristol-record-office/ ) and also the Bristol and Avon FHS who have a research room at the Record Office (http://www.bafhs.org.uk/research-room )
