I'm looking for the parents of my 4th great grandmother Catherine Coyne, who married George Aldridge and had a family in Athy, County Kildare, Ireland between about 1803-1809

Have you looked at the Athy parish register, assuming they were RC.

If she married just before 1803 than her baptism won’t have been recorded, or is 1803 to 1809 when she was born?

Those are the years I am confident she and George had children so they would have been married before 1803.

Thank you for the link. A lot of my ancestors were from Athy so hopefully I can find something of use.

Could you please give the date of death for both Catherine and George. Do you have the names of any of the children. 
Did Catherine and George remain in Co Kildare? 
What other spellings have you found for Coyne and Aldridge?  Could you please list.

Their first child was actually born 1796. I learned of her from this website

You need to check yourself if the information on that site is correct, I just looked at the two Margaret's and Richard's death.
The Margaret baptism's are correct

1873 death of Richard gives his age as 60
https://civilrecords.irishgenealogy.ie/churchrecords/images/deaths_returns/deaths_1873/020697/7261638.pdf (you need to sign in and prove your not a robot) which if the age is correct would give him a later birth year, death ages are often incorrect. The quality of the image is terrible, not sure who the informant was.
Lot more checks needed on the information from that site.

The site was made and is run by a relation of my grandmother. He's been working on it for years. She's told me that he's travelled around researching his family tree and has reached out to relations around the world. He talked with her to ask about her side of the family. So I think some of the information he's put in the tree has been from family knowledge as well as from old letters and things. Not everything on that site can be checked.

I understand that it's important not to take everything at face value. As you said, even the records have misinformation. To be honest I don't trust anything in my family tree haha
