I have found on England, Pallot's Marriage Index a record of a Jas Day and Eliz Gill marrying in 1785 in Martock, Somerset.  I'm assuming Eliz Gill in that record is the same as Mary Gill in the record you have found.  Thoughts?

I have found the following from the inscriptions on the website of the North Curry Independent Baptist Church that summarizes it nicely:

Headstone. Mary, “wife of” James DAY, died 22 June 1839, aged 36. “And his second wife” Eleanor DAY, died 27 May 1858, aged 63. “Also their husband” James DAY, died 21 December 1882, aged 90. “And his third wife” Mary DAY, died 7 March 1889, aged 82.
