The parish record for Messing shows him baptised on 16.04.1826, his mother is named as Sarah Burrells. There is no mention of a father.
Clearly Burrells can become Burls.
Sarah Burrells married Thomas Cowling at Messiing on 23.05.1838 (though it does appear in the middle of 1837 marriages), both are shown as having been widowed.

Hi. She signed her name as Sarah Burls on the record, so must be the clerk's mistake.
She has another illegitimate child, Eliza, baptised months later in Feb 1827!
All four are on the 1841 census, living in messing. Alfred and Eliza are down as Burrells.
It looks like Thomas is living with Eliza, who has married Henry Austin on the 1851 census. Sarah buried 7 Feb 1850 in messing, aged 51.
I think Thomas might have been married to Sarah's sister ... thomas cowling married Mary Anne burrells in 1820 in messing! (I can't find a marriage of a Sarah to a burrells in messing.)
Mary Anne buried 1823.
Jamiesons, Martins and McGonigals of Coleraine, Londonderry
and
Cullens, Grahams and Challenors of Dublin county and city.

Mary Ann burl baptised 1802 feering to William and Mary.
There's a Sarah Burrell baptised to james and Mary in 1785 in feering.
Jamiesons, Martins and McGonigals of Coleraine, Londonderry
and
Cullens, Grahams and Challenors of Dublin county and city.
