I think it’s Asser. Double s usually has the first s written like an f.
There’s a marriage for a John Asser and Mary Skeggs October 1760 in Margaret Roding, which is close to white roding. Not found a death for John yet or any children.
If you open a tab with google maps, and another with SEAX, you could search surrounding parishes. Do you know when William and Mary bird stopped having children? That would give you an idea of whether this was Mary’s possible marriage or not?

John Asser buried 1766 white roding. They had a child, Joseph in white roding in 1764.
There’s also a John Asser buried 1767.
Elizabeth, natural daughter of William bird and Mary Asser, baptised white roding 26/5/1771.
There’s lots of skeggs in white roding too.

wow that's great, have in the last 10 minutes viewed some correspondence from overnight confirming another DNA link through Susan's sister Mary Ann  but via a different child.
The children  of William/Mary in White Roding 1771 ( as you posted ) then as married  1773, 1775,1776,1778.
There is another BIRD family in the parish , Robert/Mary My notes are not with me, so i will update this posting. Believe the first Elizabeth may have died as a child.

updated
Jane daughtervof Robert and Mary July 1779.

I am looking into 2 DNA links with researchers who have BIRD families, one that is on the threshold of the current matching criteria. The couple had a family in Hatfield Broad Oak 1700-1710 and earlier. The other a couple  circa 1770 near to Hatfield.
Having created my own database of BIRDs in Essex and adj parishes of Herts with over 900 Bapts and 374 Male BIRD marriages, I have picked up that the period 1530-1659 & 1670-1709 for Harfield Broad Oak is not currently available on freeREG or SEAX, But this period is covered, I understand there is a transcription of this period only available in the Chelmsford Record office, is that correct.

Not sure but if you email them directly, they are very helpful. If you knew anything specific that you wanted, they will sometimes look it up for you?
