Doesn't the daughter Mary's birth record in England tell the full name of at least the mother?

Do you know Anthony's surname and estimated year of birth? Mary (the mother)'s estimated year of birth?
Sometimes the English censuses give at least a county of birth, have you found the couple on any?

Edit - I see. Anthony's name is in the title of the thread. Do you know Mary's?

To answer your actual question, the best way to research in Ireland is first to find out everything you can about the people from the English (or wherever) records. Then look through the available Irish records, which aren't many, for people that match. It helps greatly to have a few siblings to look for, both parents' full names, knowing that your person and his neighbors all might have come from the same place, etc.

I was looking for people in Ireland. Born in Ireland and moved to Manchester. Crossed wires?

I know you are looking for people in Ireland, having names makes it a little bit easier to look for them!

I only have found Anthony birth date and place Galway, mother and daughter mary(s) both cavan and all the other children in Manchester

If so, look for the births at https://www.gro.gov.uk/gro/content/ and you will get Mary's maiden name. Or are you saying it is Murphy also?

Their marriage is probably nearby also. Send for the record and get both father's names.

starting to research in Ireland with what you have now is looking for two needles in a haystack. You need more info from the English records.

or maybe, but probably not:

2nd qtr 1851
Murphy    Anthony         Liverpool    20   299
Murphy    Mary         Liverpool    20   299

Those are the only two marriage for Anthony Murphy from 1837 to 1860 at freebmd.org.uk, that have a possible spouse on the same page named Mary.

Where were they in 1851, 1871, etc? Did they board with anyone? who? where were they from? can you find siblings? etc.

I don't know about the marriage that young in the UK, I live in the US and there was a certain age you could marry on your own, and under that with parental consent, and still lower not at all.

Then you also have the possibility that all the ages on the census are wrong. The mother could be 32/34, Mary the daughter could be from 10 to 18, etc. That's why you need as many records as you can get, the full childbearing years for the mother, and so on.
