Have you seen his death certificate at all?
There is only one John Cuthbert who died in Scotland in 1879 but this was registered at St Rollox which is in Glasgow. I also checked Culbert and there was no results.
Perhaps he moved from Dundee to Glasgow after the 1851 Census?
The death certificate has a high probability of showing his parents names, although this depends entirely on the knowledge of the informant so there is a risk it may show nothing there.
EDIT: Although the John Cuthbert that died St Rollox 1879 was aged 61 so this is a bit out.
EDIT2 Ignore my last message for some reason I read his name as John. unsure why.
