I don't think she was adamant about the spelling, he just altered it to match her signature.

Is my best bet to trawl through all the orphanage records from Victoria about that time in the hope that I find one that mentions her foster mother Sylvia Simmons

Might there be school records for Annie if you go on supposition she was with some Gardiner's

UK school records ive found
 give name of parent or guardian date of birth
date of admission .
address and sometimes
previous school
And date and reason for leaving

This was 1880, 12 o'clock at night when Sylvia's son was watching the bread, possibly suggesting he wasn't a child up so late i.e. an adult?

It may be worth looking for a birth of a son to the marriage of Sylvia?

Her death certificate says no issue.

However perhaps the person informing for the death certificate was not aware, or as has been suggested before, perhaps she fostered or simply boarded another youngster (who was happy to watch a batch of bread at 4 o'clock in the morning while she rested) ::)
She no doubt needed help around her establishment so a young chap would be likely.

Or, the reporter of the item just got it wrong.

1. Fixed up Ancestry FT issue yesterday and Sylvia is now in
Buggie's Canning Family Tree => https://www.ancestry.com.au/family-tree/tree/154780646/
along with all the records I have for her.

2. Started going through this topic in a very orderly fashion, doing the quick things and highlighting the things to do in Red (in a separate 'ToDo to find Annie's Mother) document.  Was all extremely organised ;)

3. Got to Wivenhoe Reply #38 and...  that was the end of the organisation! Started investigating George Lockwood, and there were a couple.  Tried to be organised and Many hours later... 

The Exciting thing is that I found a "Mabel May" Lockwood, daughter of George Charles Lockwood, m James Allen Dupree in 1913.  Can't find her birth 

Have started 2 little trees to try to work it out...
