Her death certificate says she was 63.

The death notice and/or certificate could have been slightly out because they were both done by her son-in-law. On balance, though, I think she was born in 1837 or 1838.

Can you list all the information on the marriage certificate please. Everything on the document please.

Catherine is the author of her information on this document.

You have Catherine giving her age on five birth records.

And Catherine is the informant on these five birth certificates?

Try  The National Library of Ireland, Church Registers for the Baptisms and Marriages for the parish of Tintern (Ballycullane) https://registers.nli.ie/parishes/0573
Have you checked through these for the birth of Catherine or the marriage of her parents in that parish?

Use Griffiths Valuation to search either for Surnames or Townlands in that area. There is a James Merrin there in the town land of Saltmills (Wexford was valued c 1853)
Have checked to see if there were Cavanaghs/Kavanaghs in that general area?
