Not much help with the census records but this looks a possible death for Hughs wife

1862 Scotlands People Catherine  McKennan age 47 years Kilsyth other name Carlin mothers maiden name Thomson

I guess "Sally" on the 1841 is Sarah:

Could this be another daughter for Hugh and Catherine in the RC Registers on SP?

Elizabeth's baptism in 1840 also shows mother Catherine as Carolan. You mentioned she was born in Doune/Kilmadock, but her christening shows on 26/4/1840 at Stirling, St Mary's.. There looks to have been an earlier born Elizabeth in 1838:

I bought that death record and it says Catherine wife of Hugh a coalminer father John Carlin mother Sarah Thomson

That's good that was the right death the census Maureen found I would say that's the right family in Kilsyth
