1841,51 census Wellington, Shropshire please

Hi
I am looking for a Joseph Brown/Bullock.  I have him as Joseph Brown  in the Hemel, Hamstead 1861 census b. Wellington,Shrops at 32 years, therefore  b. 1829.  Family lore has it that Joseph Brown was originally Joseph Bullock but fled to Canada to avoid the press gangs of the time. He then changed his name to Brown when he returned to England a year or two later.  If I can locate him on the 1841 census he would be 12 before any name change.  If I can locate him on the 1851 census he would be 22 and we could note if any name change occurred or not. 
Thanks for any help in solving this mystery.

From Wellington 1841 transcription, address Lawley Bank, all born in the county

John Bullock 30 Collier
Elizabeth Bullock 40
Richard Bullock 20 Collier
Joseph Bullock 15 Collier
Richard?(Female) Bullock 3

possibly in same household but unable to tell from transcription

Elizabeth Upton 7
William Rigby 1

There are several other Bullock families but no other Joseph.

Wellington/Dawley areas - Attwood, Podmore, Wall
Sheffield - Oxspring
Machester - Clarkson
London - Whiffen/in
Leics. - Wass

Thank you so much Helen.  I don't know if this could be my Joseph or not. 
(In the 1861 Hemel Hempstead, Herts census Joseph Brown, 32, born Wellington, was married to Charlotte Brown 23.  My GGrandfather Joseph T Brown is on the census at 3 years.)
Were there any Joseph Browns on the 1841 census?
Do you have the 1851 census?
Any other ideas on how to trace Joseph?

These are the only two Joseph Browns in Wellington 1841

Joseph 45 Maltster
Ann 45
James 19 Labourer
Joseph 17   "
John 15      "
Henry 12

Address is Kings Arms, Hadley

Thanks again Helen.  I have a real mystery now...

In 1841  Joseph Brown 45 (and  Ann) son Joseph 17, (1824)
         or  Joseph Bullock 30 ( and Elizabeth) son Joseph 15 (1826)
In 1861 Joseph 32 b Well. (1829) and Charlotte son Joseph T.Brown 3 (1858) b. Lambeth
In 1881 Joseph 54 b Well. (1827) and Hannah son Joseph 23 (1858) b. Lambeth

( In the 1861 and 1881 there is a daughter Hannah b. Scotland so I think this is the same family and that Joseph remarried.  I believe this is my family.)
What do you think for 1841?
