Regarding Arzélie Allaire I found someone on FamilySearch called Marie- Arzélie Allaire, do you think that might be her? The DOB corresponds with each other mostly, with only a few mistakes.

She had 11 children with Joseph Edouard Lachapelle, which might be him but with a middle name?

Could be but you need to prove it yourself. Almost all girls had Marie as a first name but were known by one of their middle names.  Boys had Joseph as a first name.
