Logainm.ie (The Irish Place Names Commission) confirms that there was a version of Sooey spelled Suie in the past. Also Suiye and Sooghey, among others.

https://www.duchas.ie/en/src?q=sooey has some interesting folklore and local history pertaining to the area from a project in the early 20th century where accounts were taken from school children who spoke to older neighbours.

I can now see Suie! This is the first recorded place name in Ireland for this family. So exciting. Thank you! So I at least know they were there for the birth of their first child.
