There doesn't seem to be any information with regard to colours used for alterations on the 1939 register.   I looked at my mother's and her marriage date is in blue.  Someone else a little further up is in red and also includes a correction for year of birth as well as the surname change.

There may have been a reason for different colours used but it is very unlikely that we shall ever know what that was.

This is the address of Winifred Emma Knell/Pollard on the 1939 Register.
Henry Graham Pollard and Winifred Pollard were there back on the 1936 electoral register. They may have been the very first occupants of that house!
Hy G. Pollard is listed at 47 Brim Hill in a 1936 Finchley directory.

Nothing like paying attention to addresses is there    I see that Winifred is listed as housekeeper on the 1939.

I'll have a look and see if anyone else was living at that address in 1939.  Henry certainly wasn't.

Added: Just the two ladies.  One has to assume that, as has been mooted, Henry was already married, his wife wasn't living there.

Henry was staying in a hotel in Wales in 1939.
If you read some of his online stuff he was working in Wales.

Housekeeper, at one time that was used to denote a cohabitee, I can't work out how the other woman fits in but I think if Henry had been home it would still say housekeeper for Winifred.

1939  her name was crossed out in Red, what does that exactly mean please? no date.

The colour of the ink has no significance.  It is just so that records show which new name goes with its matching date. If they didn't change pen colour for each change, someone who married multiple times would have a bunch of dates and a bunch of names, and they couldn't be paired as to what date which name went with. 

For example, first marriage, they grab at random the red pen, and enter the new name and date in red.
Then you marry again, so this change they will grab any colour pen except red, so let's say they use green. New name and date are now green, and can't be confused with the "red info".
Marry a third time, they might grab blue, as red and green are already in use.

Edit:  the fact that there is no date on Winifred's entry makes me think there is no one date that she started using that name (as in, no marriage date).  After 1952 it was the National Health Service that updated the records, so she may just have told them she went by the name Pollard, with no specific start date.

very sad. I knew nothing about it at all.
