It is difficult to draw meaning from the information you are giving a forum.

Is this what you are seeing for Census records?

Census England 1841   @ Westleigh Burlescombe Devon
STARK Henry     55y   ag. lab.
STARK Jane       55y
STARK William   20y                 all born in county

Registration District: Wellington
Book: 7         Piece: 202        Folio: 8      Page: 9

Census England 1861 @ Westleigh Burlescombe Devon
HOOPER Jane           41y   head   widow   cho*er     b. Burlescombe, Devon
HOOPER Mary Jane   17y   dau                               b. Burlescombe, Devon
HOOPER Elen           12y   dau                               b. Burlescombe, Devon
HOOPER Francis         8y   son                                b. Burlescombe, Devon
STARK Jane              76y  mother widow                 b. Burlescombe, Devon

Registration District: Wellington
Household Schedule Number: 16     Piece: 1612    Folio: 55

"i have her in 1841 with her husband, he dies 1848...Name:   Jane Stark"

What other children do you have for Jane STARK (nee STRANG) and husband Henry, with whom  Jane STARK, widowed at 1848, might be living for Census, 1851?

You have a marriage for Henry STARK and Jane STRANG?  They were married?

In 1851 and 1861 there is a possible William STARK living in Mark, Somerset, working as a cheese factor.
Wife Ann (nee Newham) and children: William 1849, Charles 1853, Walter 1855, Emma 1857.
Possible death for William in Oct 1870 in Mark, Somerset.
Wife Ann died 1902.

Might this be William, also in Peyhembury/Talaton in 1851?

William Stark    29 - carpenter
Elizabeth Stark    23

HO107; 1864; 69; 22;

I think from children of this couple her maiden name was AYRES. A William STARK married Elizabeth AYRES in March 1850 at Talaton, however William's father's name was John STARK.

Looks like Henry Stark b.1825 was buried at Burlescombe 10/12/1837.

Think the William b.1814 was buried 20/5/1818 - the William on 1841 census was 20 so would have been born between 1816 and 1821 (no doubt nearer the latter) plus there was daughter Jane bc.1819 - no baptisms shown for 2nd William or Jane unfortunately.
