Mother of John sartin

I think i've been going down the wrong line trying to find the mother of a john sartin in my family tree. John was born abt 1855/56 in yeovil Somerset. In the 1871 census i have been able to find a john sartin living with his mother M Sartin stated widower and his sibling Amy sartin in yeovil somerset.
However i have not been able to trace him in the 1861 census. I do not know what the M in his mothers name stands for and i'm completely stuck on where to go next.
I have checked the Gro index and a birth registered for John sartin in 1856 does not state a mothers maiden name. Other info i already know about john is that he married a Elizabeth Gillard and he died in 1900.
Any suggestions on how to move forward with this research.

Could be her in 1841,  Martock is about 7 miles from Yeovil. Ages can be rounded down in 1841 census.

There are a couple of entries in the Somerset Gaol Register for Matilda - both October 1846. One references a previous conviction in 1844 and both are for Vagrancy.
There is also a newspaper snippet, October 1846, Taunton Courier which mentions the Vagrancy charge.
