Don't think Mary can be the mother of all those kids if she were b 1775

Have you considered that the Mary in 1841 and 1851 is not the wife he had the children with.

Have you looked for a death of a Mary wife of Thomas, or even an Elizabeth wife of Thomas.

This is a very common name in the area.

Thomas married Elizabeth Marsh 1796 they have children1799-1814.
Did Elizabeth die and he marries Mary? and they have children 1815-1825. Then perhaps she died and he married another Mary?

I know there is Thomas 1807 and Mary 1809 of T & M however there is a gap in the children of
T & E between 1805 and 1812 so are they really the children of T & E?

I can only see transcribed entries on ancestry, have you seen the originals. Clerks have been known to make mistakes.

Consider that James baptized 1825 if this Mary is his mother she is 51 years old. It's not likely.

The Sarah with them in 1841 census is 35 wouldn't this be the Sarah of Thomas and Elizabeth baptized 1808 in Burlescombe?
