START with the 1905 marriage certicate!

I've now got the 1905 Marriage Certificate in front of me. Frederick Jones aged 25 (Born Abt 1880) and Ann Smith aged 23 (Born Abt 1881) (My Gt Grandparents)
His Father was George Jones, an Ironworker.
Her Father was William Smith (deceased) a Miner.
The witnesses are Henry Smith and Alice Smith (names which are listed in Censuses below, I’m assuming Henry is the middle name of John H in the 1921 Census?)
I hope you can guide me here, as I think I've found what I'm looking for.....
I have found a 1921 Census of Frederick and Ann (my Great Grandparents) with children William, Joseph, Frederick, George, John H, Elsie and Elizabeth. Living 31 New St Hill Top.
1911 Census of Fred and Ann with children William, Joseph, Fred, George and (I think sister or sister-in-law and her children) Lizzie wright, Tomas wright and Arthur Wright. Living at 119 Hall End, West Bromwich.
1901 Census of George and Jane (the George on the Marriage Cert, being my Gt Gt Grandfather) with children Alice, Ellen, George and William (I need to find out where Frederick is at this time? I think “boarding” elsewhere) living West Bromwich.
An 1891 Census of Frederick Jones living with parents George and Jane Jones. in West Bromwich Staffordshire. On the Census is listed a daughter called Alice Jones (the same Alice who witnessed the Marriage Cert, with a different surname?) Frederick (my Gt Grandfather) Harriet and Ellen.
George's occupation in the Censuses is a "Puddler" which is similar to "Ironworker" on the Marr Cert (?)
I’m struggling to find an 1881 Census, so my research continues with this.
I’ve found an 1871 Census of George as a “Lodger.”
1861 Census of George aged 9 with Father William Jones (listed as a Lodger)
1851 Census with William (my Gt Gt Gt Grandfather) again listed as a Lodger.
The confusing part about these two Censuses (where I need to look into further) is that the birthplace is listed as Hertfordshire on one and Herefordshire on the other.
