Might this be Thomas Long, his wife Mary and family in the 1901 census?
House 17 in Johnstown (Waterford Urban No. 4, Waterford).
http://www.census.nationalarchives.ie/pages/1901/Waterford/Waterford_Urban_No__4/Johnstown/1765844/

1897 An Owen Long married Mary White.

The Owen Long on that census return was a widower, age 25.
There were births registered from Owen Long's marriage to Mary White.

Was Michael Long, birth registered 1874 one of Ellen's family? Parents Thomas & Mary (O'Brien)
1894 A Michael Long married Joanna Sullivan. Michael's residence when he married was same as Owen's when he married.
Michael & Joanna + 3 children at Lower Grange Road on 1901 census. More children born later.
When did Thomas Long die? A Thomas Long death was registered by Michael, his son.

Thanks to you all for finding this information - Yes I have all the information above already and it was just Eliza and Ellen that i couldn't find after a certain date. With your help I may now have a match for Ellen and it's just Eliza to find now. After her marriage in 1914 she disappears and I haven't found a record of her husband being killed in WW1 so far. I have a copy of a WW1pension record which i will try and enclose

Very hard to read the document but this looks like the birth of William Long in Cork- mother Lizzie Long- 10 Apr.1910-

Yes, that's their births, and you can see both were born before marriage

If you already had that information about Elizabeth's children have you tried searching for them? They might have been known as Ryan rather than Long.
