1. They liked it better than Codd  ;D
2. Have you checked Wills. Sometimes it is a condition of an inheritance that they take on a different surname
3. They wanted to disassociate themselves from the Codd name for some reason (crime?)

Debenham Suffolk

George Sillett born 5 March 1815 baptized 2 April 1815 mother Lydia Sillett.

1841 census Crowfield
George Codd 50
Lydia 48
George 25
Elizabeth 21

Perhaps because he was born Sillett

Suffolk BTS

Lydia Sillett married George Cord (transcription)/Codd 15 May 1815.

Since they married 2 Months after George was born it's likely George Cord/Codd is his father.

ADDED
George Sillett married Elizabeth Rose Oct-Dec Quarter 1845
